Leopold’s transition from a consultant for brands like Sakara Life to a solopreneur was driven by the realization that modern snack aisles lacked a simple, home-style cookie that didn't rely on ultra-processed ingredients. By positioning her product as a Trojan horse for regenerative agriculture, she aimed to scale sustainability through high-volume, delicious snacking. The strategy proved effective early on, generating $20,000 in pre-launch sales during the brand's first month.
Scaling production, however, has proven to be the brand's primary hurdle. After initial challenges with a local co-manufacturer, Leopold partnered with a smaller, organic-certified facility in Massachusetts. While the quality met her standards, the small scale of the operation creates a bottleneck as the brand prepares for a wider rollout in traditional supermarket chains like Central Market. Leopold is currently navigating the search for a larger partner capable of handling the increased output required for mass-market retail without compromising the ingredient integrity that defines her mission.
